Prepare the Coconut Mixture
- In a bowl, combine the shredded coconut, powdered sugar, melted coconut oil, vanilla extract, and salt. Stir thoroughly until the mixture is evenly moistened and holds together when pressed between your fingers. The coconut oil helps bind the mixture as it chills, giving the bites their soft yet stable texture.
Form the Bites
- Take a spoonful of the coconut mixture and form it into a small ball using your hands. Roll gently to compact the mixture, then flatten slightly to create a sturdy base for dipping.
- Press one whole almond into the center of each shaped coconut bite, nestling it securely so it remains in place during dipping. Repeat the process with the remaining mixture.
Chill
- Place the coconut–almond bites onto a parchment-lined baking sheet. Chill them in the refrigerator for at least 30 minutes. This step firms the shapes and ensures they maintain structure when dipped into warm chocolate.

- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each burst until smooth and fully melted. Avoid overheating—gently melted chocolate gives the cleanest, silkiest coating.
Dip the Bites
- Once the coconut bites are firm, dip each one fully into the melted chocolate using a fork or dipping tool. Let excess chocolate drip off before returning the coated bite to the parchment paper. Work efficiently so the chocolate remains fluid throughout the process.
Chill Again
- Refrigerate the dipped bites for another 15–20 minutes, or until the chocolate coating is completely hardened. This final chill ensures a crisp chocolate shell surrounding the soft coconut center.
