Cheesy Garlic Bread Shrimp Grilled Cheese with Monterey Jack

Directions:

Prepare the garlic bread:
Preheat your oven to 375°F (190°C).
In a small bowl, mix together the butter, minced garlic, and chopped parsley.
Spread the garlic butter mixture evenly on the cut sides of the baguette.
Place the baguette halves on a baking sheet and bake for 10-12 minutes, or until the edges are golden and crispy. Remove from the oven and keep warm.
Cook the shrimp:
Heat the olive oil in a skillet over medium-high heat.
Season the shrimp with paprika, salt, and pepper.
Cook the shrimp for 2-3 minutes per side, or until they are pink and cooked through. Remove from heat.
Assemble the grilled cheese:
Slice the garlic bread into sandwich-sized pieces.
On one slice of bread, layer slices of Monterey Jack cheese, followed by a portion of the cooked shrimp, and another layer of cheese.
Top with another slice of garlic bread.
Heat a clean skillet over medium heat and add a bit of butter.
Place the sandwich in the skillet and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
Serve:
Cut the grilled cheese sandwiches diagonally and serve hot.
